Donuts recipe – Reseta di Donuts

Yes another recipe!! This time not a cake, but Donuts!!! Donuts are fun to make and you can decorate the way you want! I made these last week and they are delicious and fluffy.

Ok, let’s start this Donuts madness!!!
Ingredients:
– 35 gr active dry yeast
– 2 Tablespoons warm water
– ¾  cup warm milk
– 2 ½ Tablespoons margarine or butter
– 1 egg
– 1/3 cup sugar
– 1 Teaspoon salt
– 2 ¾ cups flour
– 3 cups vegetable oil
Preparation:
1.       Dissolve the yeast in the warm water
2.       Add the milk, margarine or butter, egg, sugar and salt and blend until smooth

3.       Add half of the flour and mix for a few seconds
4.       Add the remaining flour and knead the dough until smooth

5.       Cover your bowl and leave in a warm place until the dough doubles in size ( about 1 hour).
6.       Roll out the dough on a floured surface until a half inch thick
7.       Punched out the donuts you should  get about a dozen donuts

8.       Place the donuts for about 30-45 minutes in a warm place until they double in size
9.       Heat the vegetable oil in a large frying pan over medium heat

10.   Fry each donut for a few seconds per side or until golden Brown.

And your donuts are ready!!! You can glaze your donuts with chocolate ganache, vanilla glaze or you can colored you glaze in the color you want.

Dark chocolate “locura”Cake

Hi everyone it has been a while. I’m sorry fort hat. I was very busy the past few weeks wit several projects and I need to repeat this is one women show so I do everything for Browny’s. But I love all the work the I have to do.

I was craving chocolate so bad for the last couple of weeks . I’m on a healthy journey. Normally I already eat healthy, but I wanted to take it to another level. I don’t eat many sweets, but I wanted to eat a chocolate extravaganza cake. A chocolate explotion let me put it that way. 
So I create this cake and let me tell you it’s delicioussssssssssssss! You can eat it this once in a 2 month period, because it has a lot of calorie. For once in a while  YES YOU CAN!

Ok let’s start this Dark chocolate “Locura” Cake  recipe
Ingredients:
·         1 ¾ Cups  of Flour
·         2 Cups of sugar
·         ¾ cups cocoa powder
·         2 teaspoons of baking soda
·         1 teaspoon of baking powder
·         1 teaspoon salt
·         2 eggs
·         1 cup of coffee
·         1 cup of buttermilk
·         1 teaspoon of vanilla extract
How to:  If you  can’t  find buttermilk, you can make your own with 1 cup of milk and 1 Tablespoon of white vinegar. Put aside for 5 minuter and your butter milk is ready.
Preparations:
·         Preheat oven to 175 degrees Celsius. Grease and put parchment paper in a 8 inch round cake pan.
·         In large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Make a well in the center.
·         Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin. Pour into the cake pan.
·         Bake the cake  for  55 minutes to 1 hour and 10 minutes, or until toothpick inserted into center of cake comes out clean.
·         Cool for 10 minutes, then remove from pans and finish cooling on a wire rack.

·         Chocolate toffee
·         Chocolate balls
·         Vanilla creme
·         Coffee creme
·         Chocolate creme

·         Chocolate donuts
·         Chocolate Lions
·         Ferrero
·         Chocolate bars

Sinterklaas cake and some history


Sinterklaas is celebrated annually with the giving of gifts on 5 December, the night before Saint Nicholas Day in the Northern Netherlands and on the morning of 6 December, Saint Nicholas Day itself, in the southern provinces, Belgium, Luxembourg and Northern France.
He is also well known in territories of the former Dutch Empire, including Aruba, Bonaire and Curaçao.

Normally I don’t make Sinterklaas cake, not because I don’t want to but around this time of the year I’m busy with Christmas projects.


So when I got this order I was very happy to make the cake! The theme was Sinterklaas so I could anything I want around this theme. The bag is very popular because in the bag you can found the presents and candies!

So I made the bag of Sinterklaas and I put all kinds of sweets and handmade carrots. The Cake is airbrushed.


The customer was happy with the cake! Now I can concentrate with my Christmas projects.

Tip: How to make a moist Cake

The last few weeks I received a lot of e-mail asking me “how can I make my cake moist?” The  number one mistake, that most of the people make is over mix their batter! Or they overcooked there cake. NO wonder that they get a very dry cake! Bleh!!!
But if you aren’t  overcooking or mixing too much, there are a few tips that I can give you to make a moist cake!
1.       The most important thing is to not overcook the cake or cupcakes.  Bake according to the recipe but check for doneness the last 5-10 minutes before scheduled.  You know it’s done when a toothpick in the center comes out with just a few cake crumbs attached or the cake springs back when pressed in the center. 


2.       Sour cream  for moistness.  You can also add applesauce to increase moistness.  Be careful though, dumping in gobs of moistening agents often leads to little more than a soggy, wet mess.  Don’t confuse “moist” with “wet.


3.       Egg whites can dry out a cake, so baking experts recommend using just the egg yolks for a moister cake.  I have never tried just the egg yolks but have added an extra egg.  This explains why white cakes are usually drier than other flavors . . . there are no egg yolks in white cakes.



4.       Make cupcakes the day before you need them.  Bake your cupcakes for 25 minutes on 175 degrees Celsius.  They come out great every time.  Since all ovens vary, find out what works for your oven and then modify recipes accordingly.
Frost and decorate them and then put them in an air tight container.  I’m not sure exactly why but letting them sit one day will make them very moist and richer tasting.

5.       Brush cake layers with simple syrup made by simmering equal amounts of water and sugar in a saucepan until the sugar dissolves completely. The syrup keeps the layers moist.

How do you manage work and Browny’s Cakes

The last two month I have been busy as always. People ask me sometimes how do you manage to work 40 hours a week and also bake cakes for your own business? It’s indeed a lot of work, but what helps me a lot is a good schedule. I have board, where I put all my cakes. On my board I put everything that I need to make to put on a cake and also everything that I need to buy to make these cakes.

For example Minnie mouse cake:

Things to make for a Minnie mouse cake:
1. The Minnie mouse topper
2. The bow
3. The dots
4. The stripes
5. Decorate the cake board

Things that I need to buy to make the cake and filling:
1. Cake: eggs, flour, butter…..
2. Filling: butter, vanilla extract…

Extra for the cake:
1. Cake board
2. Ribbon for the cake board
3. Fondant or marzipan to decorate the cake
4. Modelling paste for the Minnie Cake topper

And those thing is only for one cake. So in a month I can have like 15-20 cakes so all those steps multiple by 20 times.

The customers don’t see all these preparation. That’s why when someone tells me the cake is too expensive and I explain then all the steps they understand the price and all the work that has to be done for their cake.

Beside having a good schedule is also important having a lot of love and creativity when making these cakes. I do this because I love making  something unique every time. And what makes me also very happy is seeing the happiness and joy that my cakes can give to my customers.

Beside baking and decorating I’m also blessed, that I can manage my own administration. So I can combine my passion for finance also in my own businnes. So I’m an all around Business women!

My wish is to have my own Cake shop one day! For that I need to work very hard and keep my dream alive. Maybe with some good investors and my hard work, my dream can soon become true.

Nothing is impossible if you work hard and dedicated! Look at me this cake business start as a hobby and it growth to something beautiful and Tasty “Browny’s Cakes”

Tiramisu recipe – reseta di Tiramisu

Tiramisu meaning “lift me up”,  is a popular coffee-flavored Italian dessert. It is made of ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavored with cocoa. The recipe has been adapted into many varieties of cakes and other desserts.

This recipe is easy to make and you don’t need a lot of ingredients. Let’s start baking!!
Ingredients:
  • 5 egg Yolks
  • ¾ cup of sugar
  • 5 egg white
  • Pinch of salt
  • 455 gr. Mascarpone
  • 1 cup of milk
  • 1 ½ cup Decaf coffee
  • 400 gr. Ladyfingers
  • 2 table spoon cacao powder


    Preparations:

    The Coffee mixture

    Combine the decaf coffee with the milk in a small bowl and set aside. 



    The filling
    • Beat the egg yolks and sugar with a mixer till a smooth cream.
    • Mix the mascarpone with the egg yolk mixture until well combined.
    • Beat the egg white and pinch of salt till stiff peaks
    • Fold half of the egg white into the egg yolk-mascarpone mixture, then the remaining half just until fully incorporated. Don’t beat otherwise you will lose all the air.


    Assemble Tiramisu

    • Dip the ladyfingers (per layer) very quickly into the coffee, and line in your bowl
    • Spread a layer of the mascarpone filling over the lady fingers and repeat this till you reach the top of the bowl ending with the mascarpone filling.
    • Dust the top with cocoa powder. Cover with plastic wrap and refrigerate at least 3 hours.
    • When ready to serve, dust with extra cocoa powder. Leave out at room temperature about 20 minutes before serving.

      Important: Tiramisu can be chilled up to 2 days, but no longer or else the ladyfingers will break down too much.

      Once upon a time there was a POOP Cake……

      Once upon a time a lady was sitting in a small room waiting to deliver one of the sweetest POOP….

      Hhahahaha enough joking, but really this was one of the most strangest cake order I ever received till now. I received the pic below in a message, with question “Can you make this cake” And how much will it costs.

      I though are you serious…. Do you want to give this cake as a present to someone?? I wouldn’t be so happy receiving this cake. But she than told me there is a story behind this cake. But she didn’t tell me the story, so I’m still curious.

      When she came to pick up the cake, she was very happy. Mine version of the cake was more beautiful then on the picture that she send to me. Uhm…. of course I bake and decorate the cake with love.

      The making of the Poop Cake:
      This cake is made of 3  round chocolate cakes. Then I shape the cakes in the form of a Poop.

      This chocolate cake is filled with chocolate frosting and chocolate ganache. And of course the cake is also covered with chocolate ganache.

      Cake of past weeks

      Hi everyone. I have been busy. Busy in a good way, so I’m not complaining. I have two jobs ( I worked 80 hours a week) and I loved them both.

      In the past couple of weeks I made some amazing cakes. For example this Camera cake. It was a challenge for me and a surprise for the birthday lady. I guess I did a very pretty good job making this Camera cake. Or not?

      I also had 2 very cute cakes for the birth of a baby girl and baby boy. I made the Pink one first and another lady wanted it for her niece. So I made a blue one version of the cake. Aren’t they cute!! And the baby were also very cute.

      I also had some last minutes cakes. Why? Hhahahhaa how can you forget your birthday or birthday of relative…. The cake is the first thing that you order for a birthday celebration.
      Ok, this one was a last minute box cake. Everything in a box is always very interesting… I think, or not?

      I Always wanted to make a pillow cake. The shape of these cakes I found very fascinated. So instead of buying a pillow baking pan, I shaped the cake myself. Otherwise It wouldn’t be so much fun.

      This is the before and after of the Pillow cake. It’s amazing. It was for a girl that turned 3.

      Ice cream base recipe (without ice cream maker)

      Ingredients
      • 495 ml cold sweetened condensed milk can
      • 500 ml cold  whipping cream

      Instructions
      • Beat the cold heavy cream on medium speed with a mixer. Use a whisk attachment to beat the cream until stiff peaks form.
      • Turn down the speed a little bit and pour the condensed milk into the whipped cream. 
      • Then, turn up the machine speed again and whip until your mixture is thick and have stiff peaks.

      Now you have your ice cream base you can add in your desired flavors. After flavoring your ice cream put in a container and freeze at least 5 hours before eating.



      Flavors you can add to your ice cream base
      • Cookies and Cream Ice cream: Mix a half a cup crushed Oreo Cookies into 2 cups ice-cream base
      • Marshmallow and Strawberry: A few marshmallow and 2-3 table spoon strawberry syrup. The marshmallow is optional. You can add for example strawberries instead of the marshmallow or only the strawberry syrup is also delicious.
      • Vanilla and Oreo chocolate cake Ice cream: Break 1-2 slice of the cake into pieces and add it to  your ice cream
      These are just some examples….. You can add anything you like and made your own ice cream flavor. Trust me this ice cream taste better then the one in the supermarket.

      My Minion Cake obsession finally check!

      I like these Minions. They are the cutest and funniest cartoon ever. The Minions like to eat something that I also love to eat Banana Ba ba banana” Hahhahahahah!

      So for quiet some time I was wondering when I will receive a cake order of a Minion. I was very jealous of all the Minion cake that were posted on the Internet.

      And Wednesday I Finally receive a Minion cake order. Actually this customer was very late with her order. She send a message Wednesday asking for a cake on Saturday, Normally I don’t do this, because some cakes need preparation. But guess what……. It was a Minion cake, so I couldn’t let this one go away.

      I already had 5 cakes order for the weekend, so I worked till 3 o’clock in the morning so I can squeeze this one into my schedule. It was my own creation. The customer just said I want a Minion cake so surprise me…. I think she was very surprised and pleased when she saw the cake.

      This is a vanilla sponge cake filled with vanilla butter cream and strawberry jam! Very Jammie!!
      I have to look now, which other cake is on my wish list 🙂 But for now “Minion Cake” is of the list.
