Upside Down Pineapple Cake recipe

History of upside down Cakes
An upside-down cake is a cake that is baked in a single pan, then turned over and eaten upside-down. Usually chopped fruits such as apples, pineapples or cherries and a butter and sugar topping are placed on the bottom of the pan before the batter is poured in, so that they form a decorative topping once the cake is inverted.

Preparations:
·         Preheat oven to 350 degrees F (175 degrees C),
·          Place rack in the center of the oven,
·         Butter (or spray with a nonstick vegetable spray) a  10 inch (25 cm) round cake pan.
Topping ingredients:
·          55 grams unsalted butter, cut in small pieces,
·         160 grams light brown sugar,
·         1 medium pineapple peeled and sliced and cherries (canned pineapple can also be used)
Batter ingredients:
·         1 1/2 cups (195 grams) all-purpose flour,        
·         2 tea spoons baking powder,    
·         1/4 teaspoon salt,         
·         1/2 cup (113 grams) unsalted butter, at room temperature,         
·         1 cup (200 grams) granulated white sugar,         
·         1 teaspoon pure vanilla extract,   
·         2 large eggs, separated,          
·         1/2 cup (120 ml) milk,          
·         1/4 tea poon cream of tartaar.
Topping preparations:
·         Place the butter and brown sugar in a small saucepan and stir over medium heat until the butter has melted and the sugar has dissolved,
·         Continue cooking, without stirring, for a few more minutes or until bubbles just start to appear around the outside edges of the mixture (the sugar starts to caramelize),
·         Then remove from heat, and pour into your prepared cake pan,
·          Evenly arrange the fresh pineapple slices on top of the sugar mixture,
·         Garnish the pineapples with the cherries.
Cake Batter preparations:
·         In a large bowl, sift together the flour, baking powder, and salt,
·         Beat the butter and sugar with a mixer until light and fluffy,
·         Scrape down the sides of the bowl and then beat in the vanilla extract,
·         Add the egg yolks, one at a time, beating well after each addition,
·         Scrape down the sides of the bowl,
·          Add the flour mixture (in three additions), alternately with the milk (in two additions), ending with the dry ingredients.
·         In a clean bowl, whisk the egg whites with the cream of tartar just until the whites hold a firm peak.
·         With a large spatula gently fold the beaten egg whites into the cake batter in two additions.
·         Pour the batter into the cake pan, smoothing the top.
·         Bake in preheated oven for 45 – 55 minutes, or until the top of the cake has browned and starts to pull away from the sides of the pan.
·          Remove from oven and place on a wire rack to cool for about 10 minutes.
·         Run a sharp knife around the edge of the pan and then invert the cake onto your serving plate.

Disco Cake for Rivaynie 5th Birthday

I think this 5 year girl likes to dance otherwise her mother wouldn’t order a disco theme cake for her. I made a disco cake with a disco on top, disco’s on the sides, musical notes, dancing people, stars and her name stack into the cake. The colours silver, fuschia and black were the main colours of this cake.

I wanted to put a disco ball on top of the cake, but it was not possible to get the disco ball on time for this delivery. So for the next disco cake I will order a disco ball on time.

When fashion meets Browny’s Cakes….. 400 mini cupcakes.


Hi Brownysssssssssss,
I experience the power of online media. Like you all know I have a Facebook with more than a thousand followers. I share alot of information like recipes, tutorial, and beside that I also promote my cakes and cupcakes.

This time Fashion meets Browny’s cakes. I received an order for a fashion show for a new clothing line named “Jolie Duzon” (launched last saturday 6 of april).

Miss Zillah found Browny’s Cakes through Facebook and order 400 mini cupcakes for her guests at the fashion show. She wanted the following flavours: Vanilla, Oreo & Cream, Chocolate and Red velvet. I accept the order and it was my first BIG order. Ofcourse also good for promoting Browny’s Cakes!!!!

Turkish woman Birthday cake

Two weeks ago I had a cake order for a Turkish Woman Birthday. The daughter send me a picture on how she wanted the cake to look like. It was a beautifull cake with the colours green and purple. Tutorial of an Elephant made of fondant

A few weeks ago I made an elephant of fondant and so many people found the elephant so cute, so I decided to make a tutorial of this elephant.
I will do my best to explain all the steps. I also made a lot of pictures when I was making this elephant. This means that you can  read and also see the steps by steps of the making of this elephant.

To make the grey colour of the elephant I mix black and white fondant together. If you want a darker grey colour you can used more black than white fondant. If you want the grey colour that I made for this elephant only used a little piece of black fondant. Begin with a little piece of black fondant and keep ading black till you get the grey colour that you desire.

To help the fondant to dry faster you can add tylose powder. This makes the fondant a little bit elastic and easy to work with.

After applying the tylose powder to the fondant take a piece of fondant and shape it into a cone form.

With the palm of your hand you can shaped the belly of the elephant and with the ball tools you can make the  belly button of the elephant.

After making the belly button use the tool in the form of a little knife and make lines into the belly of the elephant for a more realistic look.

The fondant shaped in little cones.

Take another piece of the grey fondant to make 4 little cones. Two cones for the legs and 2 for the arms of the elephant. Flat the pointy side of the cones a little bit so you can glue the arms and leggs on the elephant body.

Take a little bit white fondant and rolled it out so you can make the nails of the elephant. Used a round tip to press out some small round circels.

                     Cut the circle in half to create the nails of the elephant and paste them on the legs and arms.

Let the body of the elephant dry up for one day and begin than to make the head of the elephant.  Take a piece of the grey fondant and shaped it into a vace form. Make the end longer for the nose of the elephant.

With a ball tool make an opening for the nose of the elephant and with the same ball tools you can make the holes for the eyes. With the knife tools you can make the eyebrow of the elephant.

 Stick the head of the elephant  on his body and put something under the nose that can support it. I used the Wilton colour jar and tissue to support the nose on it.

Take another piece of the grey fondant to make little cones for the ears of the elephant. Flat the pointy side of the cones with your fingers (see picture) and then make some line with your knife tool for  some more realistic look for the ears.

Put some glue on the straight side of the ears and than stick them on the head of the elephant. You have to hold the ears for a few seconds or put something to support the ears. I used Wilton colour jar to support the ears for a few minutes.

For the eyes role two little balls with black fondant and put them into the holes that you make for the eyes. Your elephant is ready let him dry for a day of two and he is ready for your cake.

If you want you can put some blush on his cheeks to make him even more realistic. The pink circles in his ears is optional. You can leave the elephant without the pink circles. I found him cuter with the pink circles in his ears.

Wilton Course 1: Decorating basic certificate

Hello Brownysssssss,

I finished my Wilton course 1 and I’m very happy with  my first Wilton certificate. The certificate has a wonderfull place in Browny’s Cakes kitchen.

Like I told you all in one of my previous blog, I already got decorating skills, but by following the Wilton course you can learn some unique decorating technique.

The Wilton courses are a little bit expensive but they worth every penny. I’m preparing for the next course.
In the course 2 you can learn more about making beautifull flowers using icing. This course is more intensive and I’m looking forward to do it.

What I learn in course 1:

  • How to make buttercream icing using only crisco,
  • How to make leaf with icing,
  • How to write on a cake using icing,
  • Some new cake borders,
  • How to make the Shagy mum flower,
  • How to make the pompom flower,
  • How to make the wilton flower,
  • How to fill and iced a cake the Wilton way.

Wilton course 1 Day 3: Pompom Flower & Shagy Mum flower

Hi  Brownyssss,

I’m one step away to get my certificate for Wilton Course 1. For today lesson we had to bake 4 cupcakes, and make buttercream at home and bring it to the class for filling and decoration.

As you can see on the picture we practice today on making some flowers. We also practice some new decoration technique on a Wilton board.

Tip: When you want to couloring you buttercream don’t used the liquid colours but used  wilton colour paste. You only need a little bit of this colour paste. When you used liquid colours you buttercream will become very liquidy.
