How to icing and decorate a Christmas cake (easy way)

Yesterday I received a message from a young lady in England named Brittney. She asked me if I can show her a easy way for icing and decorate a Christmas cake. She is a student and is going to celebrate Christmas with her friends. She is the one whos responsible for dessert and she want to show off with a beautifull Christmas cake. My Christmas Cake of 2013 is to dificult to remake, (hahahahah) She told me in her message.

So I decided to make a 2 part Youtube Tutorial on how to icing and decorate a cake for Christmas ( The easy way)

I’m going to show you how to icing and decorate the cake on the picture. You only need a few things to make this cake.

What do you need?

How to make Cake icing 1 (Suku pa dorna bolo)

There is a several ways to make cake icing. In this Youtube video tutorial I will show you an easy way to make Cake icing. In another Youtube video tutorial I will show you another way to make cake icing.

For this Cake icing you will need the following ingredients:

The confectioner sugar of Funcakes and meringue powder of Wilton are obtainable on Browny’s Cakes webshop.
If this easy way is still too complicated for you, I have a more easier method. You can buy a Royal icing mix of Funcakes on Browny’s Cakes webshop. You only need to add water to this Royal icing mix. More easier don’t exist!

Christmas cake of 2013 ” Santa in Candy & Presents land.

Last year my christmas cake theme was “Fairy tale” and it was beautiful!Click here for the picture. This year theme is “Santa in Candy & Presents land”.
Last week I had some wonderful ideas. I had 4 things in my head:
  1. Candy,
  2. Snow,
  3. Train,
  4. Christmas tree,
To put all those 4 things on my Christmas cake, I needed 2 cake. So, I bake 2 fruit cake in two different sizes. 
I made my Santa Claus with gumpaste. How to make gumpaste click here for my blog about sculpted gumpaste animals.
You need 4 color of fondant to make your Santa Claus:
  1. Red,
  2. White,
  3. Black,
  4. Skin tone color ( to create this color you need Ivory color paste. Mix it with white fondant)
Make your Santa Claus 2 days ahead so it can dry properly. I made a Santa Claus in his PJ’s, how cute…
After making my Santa Claus, I made the rest of things on my cake:
  • The Christmas tree is made with sugar paper and I put green fondant on the sugar paper.
  • The train and snowman are also made a few days ahead! 
  • Clouds,  owls, leaves and branches you can make the same day, that you are going to put your cake together.

To make and decorate this cake you need like one week. This week include baking your cakes, making your Santa Claus etc… and putting everything together!

Coconut Cake recipe – Recept bolo di coco

This is a delicious cake to bake for christmas time. It’s not difficult and it is very sweet, because it’s also glaze with coconut milk and sweet condensed milk. This cake is frost with cream cheese frosting. It’s my own coconut cake recipe. Ok, enough chit chat let’s start baking and have fun!

Information:

  • Baking time 30-35 minutes,
  • 20 cm cake pan,
  • Preheat your oven at 175 degrees celcius,




Ingredients for cake batter:

  • 4 eggs,
  • 1 cup sugar,
  • 1 teaspoon vanilla extract,
  • 1 cup coconut milk,
  • 120 gr butter,
  • 2 cup flour,
  • 2 teaspoon baking powder,
  • 1 teaspoon salt,
  • 1 cup of fresh shredded coconut,
Preparations:
  • Put your eggs and vanilla extract in your mixing bowl and mix for about 5 minutes,
  • In the mean time melt your butter with coconut milk in a pan. When the butter is completely melted, put your pan aside and let it cool down,
  • Your egg mixture is now ready,
  • Add your sugar little by little into the egg mixture. Don’t put everything at once otherwise you will lose all the air that you create by mixing the eggs for 5 minutes,
  • Sift your flour and baking powder together,
  • Add your flour with baking powder to the batter. Add the flour also little by little into the batter,
  • Stop your mixer and add the shredded coconut into the batter,
  • Add your coconut milk and melted butter into your bowl and whisk for a few minutes,
  • Your coconut cake batter is ready for the oven.
  • Bake your cake for 30-35 minutes or untill it’s done.
When your cake is ready let it cool down completely before adding the glaze!! Almost forget leave your cake into the cake pan.
Glaze ingredients:
  • 200 ml of coconut milk,
  • 200 gr. of sweet condensed milk,
Preparations:
  • Whisk the condensed milk with the coconut milk together,
  • Prick a few holes into the cake and pour the glaze on the cake,
  • Put your cake in the refrigerator till your frosting is ready,
Frosting ingredients:
  • 200 gr cream cheese,
  • 100 gr butter,
  • 1 teaspoon of vanilla extract,
  • 1- 2 cups confectioner sugar (depends on how sweet you want your frosting to be),
Preparations:
  • Put your cream cheese into your mixing bowl and mix till creamy and fluffy,
  • Add your butter into your mixing bowl and mix till the butter is incorporated into the cream cheese,
  • Add the vanilla extract and confectioner sugar. Add confectioner sugar little by little otherwise you will get sugar all over your cloths,
Tip: If you want some more coconut flavor in your cream cheese frosting add a half of teaspoon of coconut milk!
For garnish: some pineapples
Frosting:
  • Take you cake out of the refrigerator and put your cake on a serving plate,
  • Put your cream cheese frosting on top,
  • Sprinkle some fresh grated coconut on the creame cheese frosting,
  • Garnish with some pineapple,
  • Leave the cake for 30-45 minutes into the refrigerator,
Take your cake, 15 minutes before serving out of the refrigerator. So your cream cheese can get to room temperature. 
The cake is ready to serve!!!

Small Sweet bread (Pan dushi chikitu)

This is a delicious recipe for people who like sweet bread with raisins. On Curacao, where I come from you can buy ‘Pan dushi” at every bakery. You have small ones or bigger ones.

Normally the size of the “Pan dushi” is bigger. I made small ones, because is easier to roll the dough. If you want to make them biger you only need to double up the ingredients.

For more sweetness I add cinnamon and brown sugar into the filling. Normally you only put raisins as filling. I don’t like too much raisins in my “Pan dushi” so I use less raisins. Feel free to put as many as you want.

Preheat the oven at 200 degrees Celcius. Baking time 20 minutes. Yields approx. 12 small “Pan dushis”.

Ingredients for the dough:

  • 500 gr. Flour,
  • 10 gr. Yeast,
  • 50 gr. Sugar,
  • 50 gr. Soft butter,
  • 1/2 cup Milk,
  • 1 teaspoon of Yellow food color,
  • 1/2 teaspoon of Salt,
  • 25 gr. Melted butter,
  • Abricot jam to brush on the “Pan dushis” when they all done.

Ingredients for the filling:

  • 1/2 cup of Raisins,
  • 1/2 cup Brown sugar,
  • 1 tablespoon of Cinnamon,

Mix all these ingredients in a little bowl and set aside.

Preparation:

  •  Put all your dough ingredients in your mixing bowl and mix till your dough is not sticking at your bowl,
  • Cover the bowl with a kitchen towel and leave for about 30-45 minutes to rise,
  • After 30-45 minutes roll your dough out into a rectangular,
  • Brush the melted butter on the dough,
  • Sprinkle the mixture of cinnamon, raisins and brown sugar on the dough,
  • Now roll your dough,
  • Cut the dough in half,
  • Cut each half again in half and then into three equals parts,
  • Cover the “Pan dushis” with a kitchen towel and let them rise up for about 1 hour or untill the “Pan dushis” doubled in size,
  • When the “Pan dushis”are fully raised put them into the oven and bake for about 25 minutes,
  • In the mean time heat up the abricot jam,
  • When the “Pan dushis” are ready brush the abricot jam on the “Pan dushis” and let them cool off. If you can resist to let them cool down J

Fondant – Gumpaste sculpted Animals & Clown

We are a few weeks away from the end of the year and everybody is so busy! I’m busy too with all kinds of cake projects. For some of these cakes projects I need to make some things ahead. For this week I have a very cute Cake theme coming up and I need to make some fondant animals and clown. So this cake will be colorfull and cute.

Sculping animals
To sculp animals with fondant can be difficult but at the same time also easy. You only need to have some creativity! Normally I make some sketches before making my animals etc….

When you are making like an animal, you need to make all the body parts individually and then put all together.

Fondant versus gumpaste
Normally for making animals, flowers etc… you can use gumpaste. The most people use premade gumpaste, but I use fondant and ad some Tylose powder. When you add Tylose powder to fondant you create also gumpaste. The Tylose powder adds elasticity to fondant and decreases drying time. Use approximately 1 tsp to 170 gr. fondant.

Glue
Some people use water to glue fondant or gumpaste pieces together. I use edible glue. You can make this edible glue yourself. What doe you need?

You will need:
1. 1/4 cup water,
2. 1/2 teaspoon Tylose powder,

Mix  the tylose powder with the water. Don’t panic if it is a little bit clompy in the beginning. Let the mixture for a couple hours  and it will clear up and you will have a nice clear edible glue.

Devilish Chocolate Cake

I need to confess, that I have forgotten to take pictures when I was baking the cake on the picture! I was so busy with a lot of cake orders!  So I have baked another small cake which will be shown in below steps.

Please be advised that the quantities in this blog are for the cake (20cm) on the picture.
This recipe Yield 2- 8″ Layers or 1 – 8” (with a height of 10 inches). (20 cm)
Prepare cake pan(s) by coating the pan(s) generously with butter and dusting them with flour, shaking out the excess flour.
Grease your cake pan and preheat oven to 175 degrees C.
Ingredients:
  • 3/4 cup Semi Sweet baking chocolate,
  • 1/4 cup Cocoa Powder,
  • 1/2 cup hot water,
  • 170 gr. soft unsalted butter, 
  • 4 Eggs,
  • 2 Egg yolk,
  • 1 cup White sugar, 
  • 1 Tablespoon Vanilla Extract,
  • ½ cup Milk,
  • 1 ¾ cups Flour,
  • 1 ½ teaspoons baking soda,
  • ½ teaspoon salt,

Preparation:
  • Sift the flour, baking soda and the salt together in a bowl and set aside.
  • In another bowl add the cocoa powder to the hot water and whisk it smooth,

  • Add the melted chocolate. When the chocolate is complete dissolved, add your butter and vanilla extract to this and whisk all smooth.
  • In your mixer bowl whip the eggs and the egg yolks on high speed with the whip attachment until foamy, and gradually start adding in your sugar very slowly. The eggs mixture will take about 5 minutes to reach the ribbon stage.

Ribbon stage explanation: You reach the ribbon stage, when you make a circle pattern with the mixture and it stays visible for a few seconds before disappearing into mixture.

  • Add the entire melted chocolate/cocoa powder mixture to the whipped egg mixture, and whip until it is all incorporated(about 20 seconds).

  • Next we start the alternating of the dry ingredients with the milk, beginning with the dry ingredients and ending with the dry, in 3 and 2 additions. Mix untill all the ingredients are incorporated.
  • Pour the chocolate batter into your cake pan(s) and bake for approx 25-40 minutes.

Red Velvet “Paris theme” Cupcakes

Today I bake and decorate some delicious and cute Red Velvet cupcakes. These cupcakes were for a 23 birthday of a young Lady. She was very happy when she saw the cupcakes! One happy Customer again!

Last monday I post a Red Velvet recipe for a 1 – 8 ” inch cake. With the same recipe you can bake these cupcakes.You can bake approximately 26 cupcakes with my recipe. Baking time is 15 minutes! No more or less! Like I promise last monday the cream cheese frosting recipe is coming soon on my blog. You only need a few ingredients to make the cream cheese frosting.  If you don’t want to miss any blog anymore subscribe here!

The theme for these cupcakes were “Paris”. I think this young lady likes pink and Paris because those were the only thing she wanted for her cupcakes. Secretly I check her Whatsapp saw the Eiffel tower on her display. So It was not so difficult to figure out, how to decorate the cupcakes! LOL!
