Wilton Cake Course 1

Hi Brownyssssssss,
Since last week I start a Wilton course for decorating cakes. I know alot about decorating cakes but Wilton has some technique that only at a Wilton Course you can learn those technique. So for more decorating knowledge I subscribe to a Wilton course. These courses are giving by certified Wilton teachers all over the world. I’m living in holland so I’m following my course in Holland in dutch but the books are in english. 
At the end of these courses your teacher will evaluate if you did everything as teached and if so you received a Wilton certificate. Is not so easy because at the end of every course you get HOMEWORK! Yes homework it can be anything from baking cupcakes, cakes or making buttercream for the next class. 
Yesterday we had to bring a cake and also buttercream (both we had to make at home) All the student had to fill, covered and decorate the cake with buttercream. 
And this is the cake we had to copy:

These technique I already know (offcourse) but the Wilton buttercream is not the same as I used to make. The taste is not the same but it’s delicious.
I can’t wait for next week, because we are going to make buttercream flower. Buttercream flower is not one of my strongest point. So I can’t wait to learn how to do this properly and it will be all flower in the kitchen of Browny’s Cakes. (offcourse for my clients too)

Cups quantities versus ML/ GR quantities

Nowadays we hear often about cup quantities instead of GR or ML quantities. Cup quantities is often used in America and England. The cup quantities is used for dry and liquid ingredients.You can buy if you want a measuring cup especially for cups quantities. Browny’s Cakes is using the measuring cup of Wilton (recommended). This wilton measuring cup is also obtainable on Browny’s Cakes webshop.

For the people who want to keep using their GR and ML measuring cup, I made a table: cups versus ml / gram quantities. With this table you can keep using your ML/GR measuring cups and still having the same quantities used in recipe with cups measurement.

Browny’s Cakes Tips & Tricks for baking!

Browny’sssssss whether you’re baking with cake mix or baking cakes from scratch, these helpful hints will save you both time and money in the kitchen. From sunken cakes to dry cakes, these tips and tricks will give you the knowledge you need to make perfect cakes.












  • Cakes baked in glass versus metal bake differently. If using glass, you’ll want to lower your oven temperature by 25 degrees.
  • Preheat your oven before you start mixing and prepping . it’s best if the oven is preheated for 20 to 30 minutes at the proper baking temperature.
  • Be sure to use the correct pan size called for in the recipe.
  • Fat, eggs, and all kind of liquid should generally be used at room temperature. Cold ingredients could cause the batter to curdle.
  • When combining butter and sugar, take your time to cream them together  Take  at least 5 minutes to mix them together. This helps to ensure a lighter cake, as it adds tiny air pockets to the batter. Sugar granules shouldn’t be visible, but you can still feel them if you rub a bit of the mixture between your fingers.
  • Measure flour and other dry ingredients exactly. Use a knife or other flat surface to level off dry ingredients in a measuring cup or spoon.
  • Don’t forget to sift your flour! This step helps to add air and ensures that all dry ingredients are properly combined.
  • Generally, the cake batter should fill the pan by at least half and not more than 2/3, unless otherwise instructed.
  • Try to bake the cake in the middle of the oven.

Vanilla Cake recipe


There are alot of recipe for vanilla cake but most of them are very heavy and dry.  With this recipe your vanilla cake will have a soft texture (this is not a biscuit cake batter). This recipe is for a 20 diameter cakepan.

Ingredients
  • 4 eggs,
  • 1 cup of sugar,
  • 1 teaspoon of vanilla extract,
  • 1 cup of milk,
  • 115 gr. Butter,
  • 2 cup of flour,
  • 2 teaspoon of bakingpowder,
  • 1 teaspoon of salt.

Preheat your oven at  175 degrees,

Preparation

  • Grease you cake pan with butter and sprinkle a little bit of flour into the cake pan. This prevents the cake to stick into the cake pan,
  • Heat up the butter and milk in a saucepan. When the butter is melted, take the saucepan off the heat and let the mixture cool off. 
  • Beat your eggs and vanilla extract with a mixer for about 5 minutes,
  • Add the sugar little by little into the eggs foam,
  • Sift the flour, baking powder and salt together,
  • Add little by little the flour mixture into your bowl,
  • Take a little bit of the cake batter and put it into the milk and butter mixture and whisk till the cake batter is all dissolved in the milk,
  • Add the milk mixture to the rest of the cake batter and whisk for a few seconds,
  • Put the cake batter into the cake pan and bake your cake for about 25-30 minutes,
  • Your cake is ready when your insert a toothpick into your cake and it comes out dry.

How to make JP Chenet wine Cake

I get every month a new challenge…. This time a customer wanted a cake in the form of a wine bottle. She was also very specific which wine bottle it has to be. Like I told you all before I don’t drink alcohol so when people came with names etc…. I need to google. This time it was a little bit easier because this customer send me a picture of how she wanted the cake to be.
In this blog I will guide you guys step by step how I did make this Wine bottle Cake. I hope you can learn how easy it is to make your own customized wine bottle cake. The only thing you need to make is time to make this cakes, because it’s alot of work!

1. First of all you make your cake batter (see previous blogs for several flavors of cake batter) and put the batter in the oven. I made vanilla sponge cake for this wine cake. I used a 20 diameter round cake pan and a 15 diameter round cake pan to make this cake. I made two 20 diameter and  two 15 diameter round cake

2. Let the cake cool down and fill it with you favorite filling. This cake I filled with vanilla pudding and strawberry jam. (delicious this combination)

3.This cake is covered with fondant, so I make buttercream to covered the cake with. The buttercream helped the fondant stick to the cake. Let the cake chill in the refrigerator for about 15-20 minute. It’s easier to work with the cake when buttercream is hard. After the cake is chilled I cut the cakes into half and put them on the cake board (this time I used a mirror as cake board, because this cake was too big)

4. I draw a line on the cake, so I can give the cake the shape of a wine bottle. I you are not good in drawing google a wine bottle template. Here is the link where you can find a wine bottle template: http://www.houseofstirfry.com/chia/templates/wine01.html

5. After drawing the line I cut the first side of the cake in the shape of the bottle. You can see now, how the cake is getting the shape of the wine bottle.

6. On below picture you can see the final result after cutting both side of the cake in the shape of the wine bottle.

After shaping the cake don’t forget to cover the sides with buttercream otherwise the fondant won’t stick on the cake.

7. I covered the cake with white fondant and hand painted the cake with red and golden foodcolour.

8. I also made a blanket with prints, bow and a wine glas to assecorize with the cake.
